The Production of Fructose and Glucose from Cassava at PT. Associated British Budi

Sugar is one of the basic needs of the Indonesian population which tends to increase along
with the increase in population. Sugar from starch generally has a taste and sweetness almost the
same as granulated / table sugar (sucrose), some are even sweeter. Glucose and fructose are some of
the sugars that are made from starch (cassava, potato, sago, and cornstarch). Among the sugars from
starch, glucose and fructose syrup have the best prospects to substitute granulated sugar. The aim of
this internship is to broaden knowledge and implement the methods used in this internship. Glucose
and Fructose syrup produced by PT. ABB is made from tapioca flour. Indirectly processing tapioca flour
into glucose and fructose syrup can increase the economic value of cassava. The first process of
making glucose syrup is mixing. The second is enzyme liquifaction, the next process is
saccharification, filtration, ion exchange and then the evaporation process. As for the production of
fructose syrup, the initial process is done the same as in the manufacture of glucose syrup. However,
after the evaporation process is carried out, the next process is carried out, namely the isomerization
process. Then after the isomerization process, the ionization and evaporation processes are carried
out again.
