Effect of Different Storage Temperature on Color of Pet Packaged S-Tee Products at PT. Sinar Sosro
This study aimed to evaluate the effect of different storage temperatures on the alteration of the
color of S-tee products in PET bottles. Color changes in the product are considered crucial as it affects the
consumer preferences toward the product. The observation also aimed to verify the shelf life of the
product according to the expected shelf life conducted during the Accelerated Shelf Life Test (ASLT).
S-tee was stored at room temperature, refrigerated temperature, and outdoor temperature for up to 4
months. The color lightness parameter and sensory quality of S-tee were analyzed and compared. Results
showed that storing products at refrigerated temperatures could preserve the taste, aroma, and
appearance color in S-tee. One-way ANOVA analysis indicated that there were no significant changes
(P>0.05) during the 4 months storage period between each treatment. Sensory evaluation illustrated that
S-tee stored at refrigerated temperature remained the freshness regarding smell and taste scored for 6.4.
In contrast, a noticeable decrease in the S-tee freshness was found in the one stored at outdoor and
room temperature. These findings indicated that storage temperature played a vital role in altering the
color and sensory quality of S-tee beverages in PET. On the other hand, packaging materials also did play
an impact on the quality of the product as PET bottles, are more oxygen permeable than glass and cans.
Color deterioration can occur as some pigments are heat sensitive. Thus it is recommended to store the
product in a cool and dry place. However, the statistical analysis showed no significant difference during 4
months of treatment might be due to the estimated shelf life of the S-tee product is predicted to be 12
months.
