Effect of Storage Temperature on Physicochemical Properties in Tebs Lemon Lime
The internship was done for 4 months in a Research and Development department at PT. Sinar
Sosro, a company that specialized in the production of ready-to-drink tea in a returnable bottle glass. PT.
Sinar Sosro has produced a variety of beverages and has a mission to become a world-class beverage
company and fulfills the needs of its customers with the highest quality. Tebs Lemon Lime is a carbonated
soft drink (CSD) with a pleasant lemon lime flavor. CSD is now consumed daily all around the world. The
increased demand for CSD necessitates the production of high-quality products that are also safe for
consumption. The aim of this project is to observe physicochemical properties of Tebs Lemon Lime
including CO2, turbidity, acidity, pH, and brix by storing it under 3 different storage temperatures which are
room temperature (25°C), outdoor temperature (25-34°C), and chiller temperature (5°C) within 3 months.
The importance of this project is to know the best temperature storage for maintaining physicochemical
properties of Tebs Lemon Lime and ensure all of the parameters observed are still within the company
standards in all of the treatments. One-way ANOVA analysis showed that there were no significant
differences (P>0.05) in 3 different storage temperatures for 3 months in CO2 and Turbidity. The average
result showed that the temperature reduced Tebs Lemon Lime's CO2 with outdoor temperature was the
most affected which is from 6.505 to 2.565 ppm. The influence of temperature was also observed on
products that were stored on the outside for acidity which is from 0.1 to ~0.07 g/L and turbidity which is
from 1.035 to 0.8 NTU. While pH and brix were unaffected by storage temperatures since both
parameters were quite stable, brix stable at ~8.4 °Brix and pH stable at ~4. Other tests such as ASLT,
microbiological analysis and organoleptic tests are recommended to be done in further studies.
