Comprehensive Analysis of Wheat Handling and Storage Processes in Jetty and Silo Department at PT. Indofood Sukses Makmur Tbk. Bogasari Division Surabaya

Wheat (Triticum aestivum) is the most well-known cereal crop in the world as a source of food,
since it contains carbohydrates, minerals, and vitamins. Physical properties of wheat significantly influence
grain quality.The physical properties of wheat significantly influence grain quality, assessed through tests
such as the Physical Wheat Analysis Test, Allowable Storage Time of Wheat, Wheat Storage Management
System, and Wheat Cleaning Machine Process. For the physical wheat analysis test, samples underwent
examination for total damage, broken kernels, size, and screening. Allowable storage time data were
directly collected from wheat silos and statistically analyzed. Wheat storage management data were
obtained from Jetty Operation administrative staff, and information on the wheat cleaning machine
process was acquired through a direct visit. The analysis showed that Australian Wheat has the highest
score in terms of 1000 Kernel Weight, dimension, and defect test. However, for test weight and screening
test the highest results are from Canada and Bulgarian respectively. While for Allowable Storage Time, the
system in this company mostly has aligned with the literature, but still there were some types of wheat
that have exceeded the time limit. To maintain the quality, Bogasari did a regular check on the laboratory.
Same as Wheat Storage Management there were few of them that were not aligned with the first in first
out (FIFO) system, this can be happened because of this company using a gristing system to make specific
wheat flour. Moreover, to maintain the quality of the raw materials, Bogasari set up a comprehensive
pre-cleaning system. As a result, it can be concluded that Bogasari really maintains the quality of their raw
materials by carrying out tests such as physical wheat analysis to separate which wheat is suitable for use
and not. Moreover, the storage system and pre-cleaning process are also in accordance with the literature.
