Competency Assessment of an Understudied Pediococcus acidilactici (0110
Pediococcus acidilactici is a gram-positive lactic acid bacteria (LAB) widely used as a probiotic due to
its safety, benefits, and ability to survive in the harsh environment of the gastrointestinal (GI) tract.
One of the challenges for probiotic species is the presence of bile salt, which can degrade bacterial cell
membrane due to its main function in lipid solubilization. Bile salt can also increase blood cholesterol
levels, worsening conditions for people with hypercholesterolemia (HC). As a part of GI microbiome,
P. acidilactici produces bile salt hydrolase (BSH), an enzyme that neutralize bile salt to help it survive
from bile salt as and indirectly alleviating the increase in blood cholesterol levels by bile salt. This ability
reveals the potential use of P. acidilactici as an anti-HC probiotic which is further explored in this
project by whole-genome sequencing (WGS). The result shown that P. acidilactici (0110
