GMP Implementation and Risk Management Analysis at Mymeal Catering
Quality Assurance is a crucial department in food companies to ensure product quality and
safety. MyMeal Catering is a company that provides personalized and hospital healthy catering. In
order to improve operational activities efficiency; ensure product safety; and reduce the possibility of
risk and its impact, MyMeal conducted several projects about food quality assurance namely GMP
implementation and risk management analysis. During the GMP project, the condition of MyMeal
was improved to meet the regulated standard. However, several improvements need to be delayed
due to several reasons. Besides that, monitoring and evaluating action were also conducted in the
form of internal audit to ensure the continuity and effectiveness of those implementations. For the
risk management analysis, observations and interviews were conducted to collect customer
complaint data. The risk likelihood and severity were measured using a 5 point scale. Then, 5x5 risk
matrix was used to measure its risk level. It was found that most of the risk was in the extremely low
to the low level which means it’s still acceptable. These projects also covered employee training that
intended to increase their knowledge and awareness. The effectiveness of this training program was
measured through an employee test and the result showed that the training significantly increased
employee knowledge. In addition, other projects such as Zero Food Waste Campaign, new package
development, and QC assistant project were also carried out during this internship program.
