The Effect of Storage Temperature on Color of RGB Packaged S-Tee at PT. Sinar Sosro
Color is one of the major attributes that affects the consumer perception of tea quality. Color
change of the product might be clearly seen in the RGB due to its transparent appearance. Tea-based
products in Returnable Glass Bottle (RGB) is one of the most popular products launched by PT. Sinar
Sosro, including S-Tee. By launching RGB products, PT. Sinar Sosro needs to maintain product quality
so that the products are always favored by the consumers. The main activity done in the internship
was to experience and understand the quality control of the products undergone in the Research and
Development Department. Various samples from PT. Sinar Sosro factories across Indonesia were
collected and tested. The types of analysis include physicochemical analysis, microbiological, and
organoleptic analysis. The current study was conducted for 4 months starting from August-December
2022 at the Research & Development department at PT. Sinar Sosro to investigate the color change
of S-Tee in RGB stored in 3 different storage temperatures, namely room temperature, 35
C
within 1 month storage period. A spectrophotometer was used to analyze the L, a*, b* value changes
within 1 month storage period with per week color measurement. One-Way ANOVA analysis showed
that there were significant differences (P0.05) of b* value. These changes may be caused by
oxidation and degradation of polyphenols in tea under high temperature. Aside from temperature,
several factors affecting tea product are raw materials, processing method, packaging, and product
formulation. The analysis of samples in refrigerated temperature and analyze different
physicochemical properties other than color are recommended to be done in further studies.
